Queen of Cake

Let them eat cake.

Day o' baking, now with knitting goodness

Since Easter in the UK is a four-day weekend, I hosted a couple of friends from the Stitch and Bitch London group over for a brunch today. I happen to think brunch is the perfect meal to do some serious baking for - it's early enough for sweet breakfast breads, but late enough to include something more savory. I managed to be super resourceful and use a number of things I'd had in the fridge that needed to get eaten. I also managed to work my way through close to 2 dozen eggs in a weekend, and I didn't even do any Easter eggs!

So, here's the list of what I managed to whip up:
  • Challah (egg bread) knots
  • Hot cross buns
  • Asparagus, roasted potato and goat cheese quiche
  • Key lime mascarpone cheesecake with key lime curd
I'd never actually eaten a hot cross bun before, that I can recall, so I have nothing to compare them to. But they tasted yummy, so I'll call them a success. I'm extra pleased with the key lime cheesecake using the juice I brought back from California. It was (and I risk sacrilege in saying this) perhaps even better than key lime pie!

Key Lime Squares! Those were the best ever, and right now, before breakfast, you've made my mouth water.

Cheesecake trumps pie - no matter what kind.
